With apple cider, applesauce, warm spices, and chunks of apple, you have the perfect muffin for apple season. They bake up so soft, perfectly rounded, and have a crunchy cinnamon & sugar topping. This is a must-try muffin recipe for the Fall season.

Instructions

  1. Heat oven to 375 degrees F. Prepare a 12-cup muffin pan by lining with cupcake liners or spraying well with cooking spray,
  2. In a large mixing bowl, or stand mixer, beat together the butter, sugar, brown sugar, and sour cream until the mixture is light and fluffy. About 1-2 minutes. Add the eggs and beat until combined.
  3. Add the flour, cinnamon, baking soda, salt, and nutmeg into the mixing bowl. Beat on low speed just until combined. Do not overmix.
  4. Add the applesauce, apple cider, and vanilla extract. Beat until combined and the batter is moistened.
  5. Stir in the chopped apples with a wooden spoon or spatula.
  6. Fill the muffin cups nearly full.
  7. In a small bowl, stir together the sugar and cinnamon for the topping. Sprinkle 1/2 teaspoon over each muffin.
  8. Bake for 15-20 minutes. You know muffins are done when you gently press your finger on top and it springs back and feels dry.
  9. Cool the muffins in the pan for 5 minutes and then move to a cooking rack to cool completely.
