Semolina Bread with Sesame Seeds
This loaf has a rustic exterior with a crispy texture and a light yellow interior. It is topped with sesame seeds which add a delightful nutty flavor and crunch.

- Place warm water in the bowl of your stand mixer. Stir in honey until it dissolves. Add yeast and stir gently. Let sit until foamy, about 10 minutes.
- Add the semolina flour, all-purpose flour, and salt.
- Mix at medium speed for 8-10 minutes until the dough is smooth and elastic and wraps around the dough hook.
- Transfer to a greased bowl, cover with a dish towel, and let rest until dough doubles in bulk. About 2 hours.
- Transfer the dough to a lightly floured work surface. Punch the dough down, and with your fingertips, flatten the dough into a rectangle about 13 x 9 inches.
- Roll the rectangle into a cylinder shape and seal the ends.
- Carefully lift onto a parchment-lined baking sheet.
- Use a sharp knife to make 3-4 horizontal cuts on top of the dough. Lightly brush the surface with water and top with sesame seeds.
- Cover with a dishtowel and let rest for 30 minutes while you preheat your oven to 425 degrees F.
- Place a pan of water on the bottom rack of your oven.
- Bake your bread for 20 minutes, then reduce oven to 375 degrees F and continue baking for ten to fifteen minutes longer until the bread is golden and sounds hollow when tapped.
- Allow to cool completely on a wire rack before slicing.
