Semolina Bread with Sesame Seeds

This loaf has a rustic exterior with a crispy texture and a light yellow interior. It is topped with sesame seeds which add a delightful nutty flavor and crunch.

  1. Place warm water in the bowl of your stand mixer. Stir in honey until it dissolves. Add yeast and stir gently. Let sit until foamy, about 10 minutes.
  2. Add the semolina flour, all-purpose flour, and salt.
  3. Mix at medium speed for 8-10 minutes until the dough is smooth and elastic and wraps around the dough hook.
  4. Transfer to a greased bowl, cover with a dish towel, and let rest until dough doubles in bulk. About 2 hours.
  5. Transfer the dough to a lightly floured work surface. Punch the dough down, and with your fingertips, flatten the dough into a rectangle about 13 x 9 inches.
  6. Roll the rectangle into a cylinder shape and seal the ends.
  7. Carefully lift onto a parchment-lined baking sheet.
  8. Use a sharp knife to make 3-4 horizontal cuts on top of the dough. Lightly brush the surface with water and top with sesame seeds.
  9. Cover with a dishtowel and let rest for 30 minutes while you preheat your oven to 425 degrees F.
  10. Place a pan of water on the bottom rack of your oven.
  11. Bake your bread for 20 minutes, then reduce oven to 375 degrees F and continue baking for ten to fifteen minutes longer until the bread is golden and sounds hollow when tapped.
  12. Allow to cool completely on a wire rack before slicing.
