Looking for a delicious and easy way to use up those overripe bananas? Try making some moist banana bread with a hint of maple flavoring. It also makes delicious French toast. Enjoy!

  1. Preheat your oven to 350 degrees.
  2. Butter or spray with nonstick cooking spray a 9 x 3 loaf pan. Set aside.
  3. In the bowl of a stand mixer fitted with the paddle attachment, mash bananas completely.
  4. Add brown sugar to bananas and mix well.
  5. Add eggs, one at a time.
  6. Add vanilla, maple syrup, and melted butter. Mix until combined.
  7. Over the mixing bowl, sift in flour, baking soda, and salt. Mix until combined but don't overmix.
  8. Pour batter into the prepared loaf pan, and tap the pan once on the counter to release any air bubbles.
  9. Bake for 55-60 minutes. When time is up, turn off the oven and leave in the bread with the door ajar for 10 minutes.
  10. Let cool in the pan for 15 minutes, then remove from the pan and cool completely on a wire rack.
