Instructions

  1. Preheat oven to 350 degrees F.
  2. Grease a loaf pan with cooking spray and set aside.
  3. Mix oil, butter, and sugar until well combined in a large mixing bowl or stand mixer.
  4. Add eggs and vanilla and mix until smooth.
  5. Gently add in dry ingredients and buttermilk until the batter is smooth.
  6. Separate 1/2 cup of the batter into a separate bowl, and to it, add the teaspoon of cinnamon and molasses. Stir well.
  7. Pour half of the batter into the bottom of the loaf pan. Spoon half of the cinnamon batter in small dollops over the batter. Repeat with the rest of the batters.
  8. Using a skewer or butter knife, swirl the two batters together.
  9. Bake for 45 to 50 minutes or until a toothpick inserted in the center comes out clean.
  10. Pour melted butter into a large shallow dish.
  11. Stir sugar, brown sugar, and cinnamon together in a separate large shallow dish.
  12. Let the loaf cool for 10 minutes before removing from the loaf pan. The lof should be warm.
  13. Dip each side of the loaf into the melted butter. Spoon remaining over the edges to ensure the loaf is totally coated.
  14. Dip the loaf in the sugar-cinnamon mixture on all sides until totally coated.

Notes

If you don't have buttermilk, you can make some by squeezing 1/2 lemon into a measuring cup, adding milk to the 1-cup line, and stir. Let sit for about 5 minutes.
