These Churro cupcakes are heaven. Moist cinnamon cupcakes dipped into a cinnamon sugar topping and frosted with cinnamon cream cheese frosting.

Instructions

  1. Preheat the oven to 350 degrees F—line 2-12 cavity muffin tins with paper liners. Set aside.
  2. Whisk together both flours, baking powder, salt, and cinnamon.
  3. In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugar until fluffy.
  4. Add eggs, one at a time, beating until each is incorporated, scraping down the sides as needed. Beat in the vanilla.
  5. Reduce speed to low. Add flour mixture in three batches, alternating with two additions of milk, and beating until combined after each.
  6. Fill each cupcake liner three-quarters full. Bake in preheated oven for 20 minutes.
  7. Transfer tins to wire racks to cool completely before removing cupcakes.
  8. For the cinnamon sugar topping: combine sugar and cinnamon in a small bowl. Dip each cupcake top in the melted butter and then dip into the sugar and cinnamon mixture.
  9. To make the frosting: in a medium bowl, beat the butter and cream cheese until light. Mix in vanilla and cinnamon. Add the confectioners' sugar 1 cup at a time until all is incorporated, add heavy cream, and mix until desired consistency.
  10. Pipe frosting on top of cupcakes. Keep cupcakes refrigerated until ready to serve.
