I don’t know about you, but I always have bananas that are too ripe sitting on my counter.
One idea for using up ripe bananas is to freeze them and later use them for smoothies or baking. Just peel the bananas, slice them and put them in a sealed freezer bag. They can be stored for several months and used whenever you want.
Bananas are so inexpensive and make great, healthy snacks but after a few days they just don’t look appetizing.  You can preserve them or you can do what I do and make banana bread

I have so many different ways to make banana bread (see below for a few of the recipes). 

This Apple Cinnamon Banana bread is perfect for a cool fall day when apples are in season and it’s cool outside and the smell of a delicious, cinnamony banana bread brings the comfort of home. 

.If you’re looking for a twist on traditional banana bread, try adding nuts for some extra texture and flavor. You can also experiment with using different flours like almond or coconut flour for a gluten-free option.

Apple Cinnamon Banana Bread

Ingredients

Instructions

  1. Preheat oven to 350 degrees F. Line a 9-inch loaf pan with parchment paper and then grease the parchment paper with cooking spray.
  2. In a large bowl, whisk together 2 cups of the flour with the sugar, baking soda, cinnamon, and salt. Set aside.
  3. In a separate medium bowl, whisk together the mashed bananas, buttermilk, eggs, melted butter, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir just until combined.
  5. In a small bowl, combine the diced apples with the 1-tablespoon of flour, tossing until the apples are thoroughly coated. Fold the apples into the batter and then pour into the prepared loaf pan.
  6. Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean. Remove the bread from the oven and allow it to cool in the pan for 10 minutes before transferring to a cooling rack to cool completely.

Notes

You can also stir in 3/4 cup chopped walnuts with the apples.
