These potatoes are a cross between a twice-baked potato and a jalapeno popper and they make a delicious side dish and are so easy to make due to using frozen hash brown potatoes.

Instructions
- Preheat oven to 350 degrees F.
- Mix soup and sour cream in a large bowl. Add potatoes, bacon, jalapeno, and cheese and stir until well blended.
- Spoon the mixture into a 13 x 9-inch baking dish.
- Combine cracker crumbs and melted butter and spread over the potato mixture.
- Bake for 55-60 minutes until heated through.
