Banana Strawberry Cupcakes With Strawberry Topping

Delicious banana cupcakes with strawberry Jello filling and strawberry whipped topping. Easy to make and won't last long.

- Preheat oven to 350 degrees. Line 2 cupcake trays with liners. ( I get 20 cupcakes filling 3/4 full). Set aside.
- To the bowl of your stand mixer add the cake mix, water, butter, and banana. Blend on medium for about 2 minutes.
- Scoop into your prepared liners about 3/4 full and bake for 20-25 minutes.
- Allow to cool completely on wire racks.
- Once cooled, prepare the Jello mixture by adding the Jello packet and boiling water to a medium bowl and stirring until completely dissolved. Add in the cold water and stir.
- Use a skewer to poke about 6 holes into each cupcake, then gently pour the Jello mixture over each.
- Place into the fridge for two hours to set.
- Make your Strawberry Whipped Topping
Strawberry Whipped Topping
- Place your mixing bowl and beaters/whisk attachment in the freezer for 15 minutes.
- Remove the bowl from the freezer and add the heavy cream, powdered sugar, and strawberry Jello powder.
- Beat with an electric mixer or in your stand mixer for 4-5 minutes, or until stiff peaks form.
- Pipe onto cupcakes. Store leftovers in the fridge up to 3 days.
