This soup is a quick and easy meal that's perfect for any night of the week. It's packed with cheesy tortellini and fresh spinach, and the creamy texture makes it even more delicious.

  1. Dissolve the soup mix into the 2 cups water and set aside.
  2. Melt the butter in a large saucepan.
  3. Add onion, garlic, carrots, Italian seasoning, salt, and pepper. Cover and cook over medium-low heat for 6 minutes, or until vegetables are tender.
  4. Stir in flour and mix until combined and thickened.
  5. Slowly add broth and water with the soup mix. Continue stirring until everything is well combined and there are no clumps.
  6. Bring soup to a boil.
  7. Add frozen tortellini and spinach.
  8. Continue to cook over medium-high heat, stirring occasionally, for 5 to 6 minutes, or until the tortellini is tender and heated.
  9. Stir in cream, bring back to a steady boil, and cook for 2 to 3 minutes more, or until smooth and thickened.
  10. Remove from heat and let stand for 5 minutes.
  11. Taste for salt and pepper, and adjust accordingly.
