During the holiday baking season, Hot Chocolate Cookies are an all-time favorite. These melt-in-your-mouth cookies are topped with melted marshmallows and chocolate, like a delicious cup of hot chocolate.

For the cookies
- In a double boiler, melt the butter and chocolate, stirring frequently. Once melted, set aside to cool.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In a large bowl or the bowl of your stand mixer, beat the sugar, eggs, and vanilla on low speed until combined. Add the cooled chocolate and mix until combined.
- Gradually add in the combined dry ingredients and mix until combined.
- Cover the bowl and place in the refrigerator for 2 hours to firm up.
- Preheat oven to 325 degrees F and line a baking sheet with parchment paper.
- Using about 1 1/2 tablespoons, roll the batter into balls and place on the parchment-lined baking sheet about 2 inches apart.
- Bake cookies for 10 minutes. Remove from the oven and top each with 1/2 marshmallow. Lightly press marshmallow into each cookie and return to oven for 2-3 minutes.
- Once the cookies are done baking, let them cool for a few minutes before transferring them to a wire rack while you make the icing.
For the icing
- In a large bowl, combine all the ingredients until smooth.
- Using a spoon, spoon some icing over each cookie.
- Top each cookie with some sprinkles.
