These mashed potatoes are not only easy to make ahead but also super creamy and decadent. They're seriously the creamiest mashed potatoes you'll ever taste.

  1. Preheat oven to 350 degrees F.
  2. To cook the potatoes, start by placing them in a large pot and covering them with water. Add a few big pinches of salt to the water. Bring the water to a boil and let the potatoes cook for around 15-20 minutes, or until they are fork-tender. Once done, drain the potatoes and return them to the pot. Turn the heat under the pot to low and steam out any excess moisture for about 3 minutes.
  3. Add the potatoes to a large bowl or the bowl of your stand mixer. Beat on low speed until they are mashed. Add warm melted butter and season with salt and pepper to taste.
  4. Mix the cream cheese and gradually add warm half and half until the desired consistency is reached (less than 1 cup may be necessary).
  5. Spread the mashed potatoes into a greased 9 x 13-inch baking dish and sprinkle with 2 tablespoons of cubed butter.
  6. Bake in the preheated oven for 45 minutes. Remove from oven and enjoy!
