  1. In a large bowl or the bowl of your stand mixer, cream together the butter and sugar.
  2. In a small separate bowl mix salt in lemon juice to dissolve the salt then add to butter mixture along with the zest, and mix.
  3. Add the flour and mix well, then fold in the walnuts.
  4. Knead the dough lightly, then split it in half and roll it into two logs about 2 inches thick. Wrap each log in plastic wrap and refrigerate for a minimum of 3 hours to firm up.
  5. Preheat oven to 350 degrees F. and line baking sheets with parchment paper.
  6. Cut each cookie log into slices about 1/2-inch thick. Arrange on parchment.
  7. Bake for 12-13 minutes, then remove to rack to cool.
