This delectable dessert features luscious red fruit topped with a crispy oat streusel, and it's incredibly easy to make. The strawberry rhubarb crisp is one of the best and simplest desserts you can prepare with just 30 minutes of active work time. Slicing the rhubarb and berries, mixing the topping ingredients, and baking everything is all it takes to create this foolproof dessert.

- Preheat oven to 400 degrees F. Butter a 9 x 13 inch baking dish. Set aside.
- In a mixing bowl or stand mixer, whisk together flour, oats, brown sugar, cinnamon, nutmeg and salt. Add butter and vanilla and mix until it comes together in crumbles and no large clumps of butter remain. Transfer to refrigerator while preparing filling.
- In a large bowl, toss together the strawberries, rhubarb and sugar. Pour into the prepared baking dish.
- In a small bowl, whisk together the orange juice, orange zest and cornstarch until well blended. Slowly and evenly pour over the strawberry rhubarb mixture.
- Sprinkle crumble evenly over top.
- Bake in preheated oven 40-45 minutes until juices are bubbling and crisp is golden brown.
- Serve warm.
