This amazing Cherry Almond Biscotti is perfect for dipping in your favorite tea or simply savoring on its own. The traditional Italian cookie now comes with a twist of sweet maraschino cherries and crunchy almonds - a yummy treat you wouldn't want to miss!

- Preheat oven to 350 degrees F. In a large bowl or the bowl of your stand mixer fitted with the paddle attachment, beat sugar, butter, almond extract, vanilla extract, and eggs until combined.
- Add flour, baking powder, and baking soda and mix well. Stir in almonds and cherries.
- Turn the dough out onto a lightly floured surface. Gently knead 2-3 minutes or until dough holds together. Divide dough in half. Shape each half of dough into a rectangle about 10 inches x 3 inches, rounding the corners, and place each rectangle on a parchment-lined baking sheet.
- Bake for about 25 minutes or until the center of the dough is firm to the touch. Remove from the oven and cool on a cookie sheet for 15 minutes.
- Remove to a cutting board. Cut each rectangle into 1/2-inch slices using a serrated knife. Place slices, cut side down on the parchment-lined baking sheet.
- Bake 15 minutes longer or until crisp and lightly browned. Immediately remove to a wire rack to cool completely.
