This amazing Cherry Almond Biscotti is perfect for dipping in your favorite tea or simply savoring on its own. The traditional Italian cookie now comes with a twist of sweet maraschino cherries and crunchy almonds - a yummy treat you wouldn't want to miss!

  1. Preheat oven to 350 degrees F. In a large bowl or the bowl of your stand mixer fitted with the paddle attachment, beat sugar, butter, almond extract, vanilla extract, and eggs until combined.
  2. Add flour, baking powder, and baking soda and mix well. Stir in almonds and cherries.
  3. Turn the dough out onto a lightly floured surface. Gently knead 2-3 minutes or until dough holds together. Divide dough in half. Shape each half of dough into a rectangle about 10 inches x 3 inches, rounding the corners, and place each rectangle on a parchment-lined baking sheet.
  4. Bake for about 25 minutes or until the center of the dough is firm to the touch. Remove from the oven and cool on a cookie sheet for 15 minutes.
  5. Remove to a cutting board. Cut each rectangle into 1/2-inch slices using a serrated knife. Place slices, cut side down on the parchment-lined baking sheet.
  6. Bake 15 minutes longer or until crisp and lightly browned. Immediately remove to a wire rack to cool completely.
