This hearty Cheesy Vegetable Soup is ready in 35 minutes and is pure comfort food. It is loaded with vegetables, bacon, and a rich creamy, cheesy broth.

- To begin, cook the bacon in a Dutch oven until crispy. Once it's cooked, remove it from the pot, but make sure to leave the bacon grease behind.
- Add the carrots and onions to the pot and saute until the carrots are tender.
- Add in the minced garlic and cook until fragrant.
- Pour in the chicken broth, water, and the potato cubes. Bring to a boil and cook for 10 minutes, or until the potatoes are just about cooked.
- Stir in the corn and broccoli florets and cook until the broccoli is tender, about 5 minutes.
- Whisk together the milk and flour and add to the pot along with salt and pepper.
- Turn the heat to low, add the bacon back into the pot along with the cheese, and cook, stirring often, until the cheese completely melts.
