This hearty Cheesy Vegetable Soup is ready in 35 minutes and is pure comfort food. It is loaded with vegetables, bacon, and a rich creamy, cheesy broth.

  1. To begin, cook the bacon in a Dutch oven until crispy. Once it's cooked, remove it from the pot, but make sure to leave the bacon grease behind.
  2. Add the carrots and onions to the pot and saute until the carrots are tender.
  3. Add in the minced garlic and cook until fragrant.
  4. Pour in the chicken broth, water, and the potato cubes. Bring to a boil and cook for 10 minutes, or until the potatoes are just about cooked.
  5. Stir in the corn and broccoli florets and cook until the broccoli is tender, about 5 minutes.
  6. Whisk together the milk and flour and add to the pot along with salt and pepper.
  7. Turn the heat to low, add the bacon back into the pot along with the cheese, and cook, stirring often, until the cheese completely melts.
