- Preheat the oven to 375 degrees F and line a 12-cup muffin pan with cupcake liners.
- Combine all streusel ingredients in a small mixing bowl. Use a pastry blender or fork to mix well. Work the mixture between your fingers until it starts to hold together. Set aside.
- In the bowl of your stand mixer, fitted with the whisk attachment, start by beating the eggs. Next, add 1 cup of granulated sugar and continue to beat for a minute or two until the mixture is completely combined. While the mixer is still running, gradually pour in the oil and then add the vanilla.
- In a separate bowl, whisk together the flour, cinnamon, nutmeg, salt, and baking soda.
- Using a rubber spatula, mix the flour mixture into the wet mixture, a little at a time alternating with the sour cream.
- Add the chopped apple and mix with the wooden spoon just until combined. Divide the batter between the cupcake liners.
- Divide the streusel topping evenly over the muffin tops, pressing it down lightly onto the batter.
- Bake the muffins in the preheated oven at 350°F for 22-25 minutes. Check if they are done by inserting a toothpick in the center of one of the muffins, and if it comes out clean, then the muffins are ready. Take out the muffin pan from the oven and allow the muffins to cool for about 10 minutes. Then, carefully remove the muffins from the pan and place them on a wire rack to cool completely.
