Chicken and Waffles
Chicken and Waffles have become a popular dish that's taken me a while to try, but now that I have there is no turning back. I came up with this recipe that doesn't take long as long as you plan ahead.

To make the waffles
- In a large bowl or the bowl of your stand mixer fitted with the whisk attachment, whisk the eggs until light and fluffy. Beat in milk, cream vegetable oil, and vanilla.
- In a separate large bowl, whisk together the flour, sugar, baking powder, and salt.
- Slowly add the dry mixture to the egg mixture while beating at low speed. Mix just until combined.
- Let batter rest for 5 minutes (you will see bubbles forming).
- Spray preheated waffle iron with non-stick cooking spray. Pour batter into hot waffle iron and cook until golden brown.
To make the chicken
- Combine buttermilk, hot sauce, and one teaspoon of salt in a large bowl. Add chicken pieces to bowl and cover. Place in the refrigerator to marinate 4 hours to overnight.
- In a shallow dish, combine flour and the next 7 ingredients. Heat 2-3 inches in a deep pan to 350 degrees F.
- Dredge each piece of chicken in the flour mixture, dip it back into the buttermilk, and dredge again in the flour.
- Fry chicken until dark golden brown on the outside and juices run clear on the inside. Cook in batches so as not to overcrowd the pan. Remove chicken to a paper towel-lined plate when done to absorb excess oil.
- Serve two pieces of chicken on top of each waffle. Top with maple syrup.
