Chicken and Waffles

Chicken and Waffles have become a popular dish that's taken me a while to try, but now that I have there is no turning back. I came up with this recipe that doesn't take long as long as you plan ahead.

Instructions

To make the waffles
  1. In a large bowl or the bowl of your stand mixer fitted with the whisk attachment, whisk the eggs until light and fluffy. Beat in milk, cream vegetable oil, and vanilla.
  2. In a separate large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Slowly add the dry mixture to the egg mixture while beating at low speed. Mix just until combined.
  4. Let batter rest for 5 minutes (you will see bubbles forming).
  5. Spray preheated waffle iron with non-stick cooking spray. Pour batter into hot waffle iron and cook until golden brown.
To make the chicken
  1. Combine buttermilk, hot sauce, and one teaspoon of salt in a large bowl. Add chicken pieces to bowl and cover. Place in the refrigerator to marinate 4 hours to overnight.
  2. In a shallow dish, combine flour and the next 7 ingredients. Heat 2-3 inches in a deep pan to 350 degrees F.
  3. Dredge each piece of chicken in the flour mixture, dip it back into the buttermilk, and dredge again in the flour.
  4. Fry chicken until dark golden brown on the outside and juices run clear on the inside. Cook in batches so as not to overcrowd the pan. Remove chicken to a paper towel-lined plate when done to absorb excess oil.
  5. Serve two pieces of chicken on top of each waffle. Top with maple syrup.
