Looking for a perfect treat for the holidays? Try this traditional German stollen bread! It's a sweet and delicious bread filled with candied fruit. While there are many variations of stollen bread, this recipe is the one that my family has been making for years.

Instructions

  1. In a large bowl, or the bowl of your stand mixer, stir together sugar, yeast, and warm milk. Let stand for 5 minutes to activate the yeast.
  2. Beat in eggs, then add in the remaining ingredients except for flour and fruit.
  3. Using a dough hook, slowly add in the 7 1/2 cups flour. Knead the dough for about 10 minutes and it is well combined.
  4. Place dough in a large buttered bowl and cover with a towel. Let rise for an hour.
  5. Pound down the dough and mix in the candied fruit.
  6. Break the dough into four loaves and place on parchment-lined baking sheets, giving room for each one to rise. Cover the loaves with towels and let rise again for about an hour.
  7. Preheat oven to 375 degrees F. Bake for 28-35 minutes and lightly brown on top—cool loaves on a wire rack.
  8. In a small bowl, combine icing ingredients until smooth. Top loaves with icing and let set.
