A delicious way to use leftover mashed potatoes. These rolls are soft and flaky. Perfect as a dinner roll or for sandwiches. Easy to make in the stand mixer.

Instructions
- In a mixer with the whisk attachment, blend mashed potatoes and milk.
- Let cool to room temperature and add yeast, water, and 2 sugar.
- Mix well and let sit for 5-10 minutes for the yeast to activate.
- Add eggs, salt, and melted butter. Blend well.
- Change whisk to dough hook attachment on your stand mixer and slowly add flour 1 cup at a time.
- Mix approximately 10 minutes or until the dough no longer sticks to the sides of the bowl.
- Coat a large bowl with butter. Add dough and turn over once to cover in the butter. Cover with a dish towel and let rest in a draft-free spot for about an hour or until the dough has doubled in size.
- Butter a 9 x 13 inch casserole pan and a 9 x 9 casserole pan.
- Punch dough down and roll into a rectangle that is about 3/4 inch thick. Using a 3" biscuit cutter, cut out biscuits and place them into the casserole dishes.
- Cover with a towel and let rest for another hour.
- Preheat oven to 350 degrees.
- Bake rolls for 25 minutes or until the tops are golden.
- Remove from the oven and brush tops with melted butter.
Notes
It is fine to use mashed potatoes that have been cooked with milk, butter, and seasoning. This just adds to the flavor.
