These biscuits are irresistibly soft and flaky, with a delicious combination of crispy bacon, cheddar cheese, and sweet maple syrup. They make for a perfect breakfast or snack at any time of day.

  1. Preheat oven to 450F. Line a baking sheet with parchment paper. Set aside.
  2. Cook diced bacon in a hot skillet until brown and crispy. Drain excess fat and transfer to a paper towel-lined plate.
  3. In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl, combine bacon, flour, cheese, baking powder, salt, and baking soda.
  4. Grate butter using the large holes of a box grater. Stir into flour mixture.
  5. In a medium bowl, whisk together buttermilk and 4 Tbls of maple syrup. Add to the flour mixture and stir using a rubber spatula until a soft dough forms.
  6. Working on a floured surface, knead the dough 3-4 times until it comes together. With your hands, pat the dough into a 1-1/4-inch thick rectangle.
  7. Cut out 12 rounds using a 2 to 2-1/2-inch biscuit or cookie cutter.
  8. Place biscuits onto the prepared baking sheet and place in the refrigerator for 20 minutes.
  9. Remove biscuits from the refrigerator, place into oven, and bake for 15-18 minutes or until golden brown.
  10. In a small bowl, whisk together the remaining 2 Tbls maple syrup and butter.
  11. Brush biscuits with the mixture and serve warm.
