Scones
- Preheat oven to 400 degrees and line a baking sheet with parchment paper.
- In a large mixing bowl, combine sugar with lemon zest and rosemary until combined.
- Add flour, baking powder, and salt. mix until combined.
- With a pastry cutter or paddle if you're using a stand mixer, work the butter into the flour mixture until it resembles coarse crumbs and the butter is about the size of peas.
- In a small bowl, whisk together the heavy cream and egg. Slowly mix the wet ingredients into the flour mixture, mixing until the dough comes together.
- Turn the dough out onto a floured surface and gently form into a flat circle, about 1/2 -1" thick. Cut the dough into 8 equal pieces and place on the baking sheet.
- Brush the tops with heavy cream.
- Bake for 18-20 minutes, or until the tops are lightly golden brown.
- Allow to cool for 5 minutes.
Glaze
- Combine lemon juice, lemon zest, and 1 cup of powdered sugar and whisk until combined adding more powdered sugar until you get the consistency of a thick glaze.
- Drizzle over the tops of each scone.
- When the glaze is almost dry, add a second layer over top.
- Let the glaze set before serving.
