- Bring chicken broth and seasoning mix to a boil in a deep skillet.
- Add rice and cover until rice has absorbed most of the liquid and is almost cooked.
- Uncover and add Ro-Tel, beans, corn, and chopped jalapeno. Stir until well combined.
- Cover again and cook for 5-7 minutes until all the liquid is completely absorbed and all ingredients are heated through.
Notes
Add cooked chicken or steak to make this rice dish into a complete meal. Make sure to serve with sour cream, some salsa, and maybe a margarita.
