Enjoy a satisfying salad with grilled chicken, spinach, arugula, walnuts, goat cheese, and roasted beets tossed in honey balsamic dressing.

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit. Rub the outside of the beets with olive oil and place them in a roasting pan with 1/4 cup of water. Cover with foil and roast the beats for 30-40 minutes or until the beets can easily be pierced with a fork. Let cool, peel, and slice.
  2. To prepare the dressing, simply combine all the ingredients listed for the dressing and whisk them together.
  3. In a bowl, combine the sliced beets and sliced red onion. Drizzle with half of the dressing and toss to coat. Let stand at room temperature for 15-20 minutes so the beets absorb the dressing and soften the onions.
  4. Place arugula and spinach on a plate. Top with grilled chicken, the beet and onion combination, walnuts, and goat cheese. Drizzle the remaining dressing over the top.
