Ingredients

16oz frozen cheese tortellini, cooked
1 small onion, chopped
2 Tbls olive oil
3 garlic cloves, minced
1 can (14-1/2oz) diced fire-roasted tomatoes, undrained
1 1/2 cups baby spinach
1 1/2 tsp dried basil
1 tsp salt
1/2 tsp black pepper
1/2 tsp red pepper
1 1/2 cups heavy whipping cream
1/2 cup grated parmesan cheese
3 grilled chicken breast, cut into pieces

Instructions

In a large skillet, saute onion in olive oil until tender. Add garlic and cook one minute longer. Add the tomatoes (including the liquid), spinach, basil, salt, and peppers.
Cook and stir over medium heat until liquid is absorbed about 3 minutes. Stir in cream and cheese. Bring to a boil. Reduce heat: simmer, uncovered, for 8-10 minutes or until thickened.
Add cooked tortellini and grilled chicken to the pan and toss with sauce. Sprinkle with additional cheese if desired.
