These Buttery Honey Lemon Rolls are soft and fluffy with just a touch of citrus. They are delicious buttered and drizzled with honey.

  1. Put the yeast and the tablespoon of honey into 1/2 cup warm water in a small bowl. Stir to dissolve.
  2. In a large measuring cup measure the milk and add the lemon juice. Set aside while it curdles.
  3. In the bowl of a stand mixer, combine the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Attach the paddle to the mixer and add the grated lemon zest. Mix all the ingredients until the lemon zest is evenly distributed.
  4. Cut the butter into 16 small cubes and add it to the flour. Mix until butter is evenly distributed and resembles large crumbs. Add the yeast mixture and the curdled milk. Stir to combine, be sure not to overmix.
  5. Cover and refrigerate the dough for at least 2 hours, and up to 24 hours.
  6. Heat the oven to 450 degrees F. Line a large baking sheet with parchment paper and set aside.
  7. Turn the refrigerated dough out onto a floured surface. Knead lightly just a few times until the dough becomes smooth enough to pat out easily. Pat the dough out to a 3/4-inch thickness and cut into rounds with a biscuit cutter.
  8. Place rolls on the parchment-lined baking sheet and bake for 12 minutes or until golden.
  9. Combine the 3 tablespoons of melted butter and 2 tablespoons of honey. Brush mixture over warm rolls. Let sit for 5 minutes to cool.
