Garlic Parmesan Broccoli
This is the kind of side dish where you will be happy to eat your vegetables. With broccoli and crispy bacon baked in a delicious parmesan garlic sauce, topped with bubbling mozzarella. Not only is it tasty, but it is low carb!

- Preheat oven to 350 degrees F.
- Fry the chopped bacon in an iron skillet or a large oven-safe skillet over medium heat until crispy. Use a slotted spoon to transfer to a paper towel-lined plate. Set aside.
- In the same pan, melt the butter with the bacon grease, add the onion, and cook until transparent (about 2 minutes), while scraping up any browned bits leftover from the bacon. Add the broccoli and season with salt and pepper and cook while stirring occasionally for about 3 minutes.
- Add in the garlic and stir it through the broccoli for 30 seconds. Pour in the cream, reduce heat to low, and let simmer for about 3- minutes while occasionally stirring.
- Add the bacon and stir to combine all the flavors. Top with the mozzarella and parmesan cheese. Bake in the oven for 10-15 minutes until all the cheese is melted and lightly browned.
