Garlic Parmesan Broccoli

This is the kind of side dish where you will be happy to eat your vegetables. With broccoli and crispy bacon baked in a delicious parmesan garlic sauce, topped with bubbling mozzarella. Not only is it tasty, but it is low carb!

  1. Preheat oven to 350 degrees F.
  2. Fry the chopped bacon in an iron skillet or a large oven-safe skillet over medium heat until crispy. Use a slotted spoon to transfer to a paper towel-lined plate. Set aside.
  3. In the same pan, melt the butter with the bacon grease, add the onion, and cook until transparent (about 2 minutes), while scraping up any browned bits leftover from the bacon. Add the broccoli and season with salt and pepper and cook while stirring occasionally for about 3 minutes.
  4. Add in the garlic and stir it through the broccoli for 30 seconds. Pour in the cream, reduce heat to low, and let simmer for about 3- minutes while occasionally stirring.
  5. Add the bacon and stir to combine all the flavors. Top with the mozzarella and parmesan cheese. Bake in the oven for 10-15 minutes until all the cheese is melted and lightly browned.
