German Dark Rye Bread
High in iron, potassium, calcium, zinc, and soluble fibre, rye bread is a dark, dense bread with a distinctive earthy taste. Rye bread is considered more nutritious than wheat bread. As well as being super filling, it also contains more fibre and B vitamins than wheat breads.

- In bowl of stand mixer, combine all-purpose flour, salt, cocoa, yeast, and caraway seed.
- Heat and stir molasses, butter, sugar, 2 cups water, and two tablespoons oil until warm. Add to dry mixture.
- Beat at low speed for about a minute, scraping the bowl.
- Beat 3 minutes at high speed.
- Then, with hook attachment, add in rye flour.
- Knead for 5 minutes at medium speed.
- Cover, and let rest for 20 minutes.
- Punch the dough down, divide it in half, and shape it into two oval loaves on greased baking sheets.
- Brush with a small amount of cooking oil. Slash tops with a knife.
- Cover, let rise until double (45-60 minutes)
- Bake at 400 degrees F for 25-30 minutes.
- Cool on wire racks.
