German Dark Rye Bread

High in iron, potassium, calcium, zinc, and soluble fibre, rye bread is a dark, dense bread with a distinctive earthy taste. Rye bread is considered more nutritious than wheat bread. As well as being super filling, it also contains more fibre and B vitamins than wheat breads.

  1. In bowl of stand mixer, combine all-purpose flour, salt, cocoa, yeast, and caraway seed.
  2. Heat and stir molasses, butter, sugar, 2 cups water, and two tablespoons oil until warm. Add to dry mixture.
  3. Beat at low speed for about a minute, scraping the bowl.
  4. Beat 3 minutes at high speed.
  5. Then, with hook attachment, add in rye flour.
  6. Knead for 5 minutes at medium speed.
  7. Cover, and let rest for 20 minutes.
  8. Punch the dough down, divide it in half, and shape it into two oval loaves on greased baking sheets.
  9. Brush with a small amount of cooking oil. Slash tops with a knife.
  10. Cover, let rise until double (45-60 minutes)
  11. Bake at 400 degrees F for 25-30 minutes.
  12. Cool on wire racks.
