There is something very special about making homemade ice cream that makes it worth the effort. This recipe starts off with making a chocolate ganach and then mixing it into the chocolate ice cream base for a delectable chocolate experience.

- Bring the cream to a simmer in a small saucepan.
- Place the chocolate chips in a heat-proof bowl. Pour the cream over the chocolate and let it sit for 5 minutes. Then, stir it until smooth and set aside.
- In the bowl of your stand mixer, beat the sugar, egg yolks and and cacao until smooth.
- In a medium saucepan, bring the milk to a simmer. With the mixer still mixing on low, slowly pour the milk over the sugar/egg/cacao mixture. Mix until smooth.
- Pour the whole thing back into the saucepan and cook over low heat. Heat while stirring until mixture is smooth and slightly thickened.
- Pour into the ganache and stir.
- Place mixture in the refrigerator overnight, then run through your ice cream maker according to the directions. Mine took 25 minutes.
- Pour into a container and freeze 2 hours before serving.
