I love the way the sweetness of the carrots and the savory flavors combine in this Roasted Carrot Arugula Salad, and the almonds add a perfect crunchiness. To make it a complete meal, I usually add grilled chicken. It tastes absolutely delicious and is one of my favorite dishes.

- Preheat oven to 400 degrees F.
- Mix together carrot slices, almonds, and garlic in a shallow baking pan. Drizzle with oil, then sprinkle with salt and pepper. Spread evenly in the pan.
- Roast, stirring twice, until carrots are soft and edges turn brown about 20 minutes. Remove from oven and cool to room temperature.
- Transfer carrots to a mixing bowl. Drizzle with vinegar and honey, toss to coat. Add blue cheese and cranberries, toss again to combine. Stir in arugula.
