  1. Drain and rinse the chickpeas. Place chickpeas on paper towels and dry completely (It is very important for them to be very dry to get crispy in the oven).
  2. Place the chickpeas on a foil line baking sheet and mist with oil, sprinkle with spices, and shake pan gently until all the chickpeas are well coated. Place pan in a cold oven.
  3. Set oven to 425 degrees F and let roast for 40 minutes, stirring every 10 minutes.
  4. Turn the oven off and leave the pan in the oven for at least an hour.
  5. Remove and let cool completely.
